Jackson didn't earn celebrity status as a member of the 1992 U.S. Olympic kayaking team, but the reigning freestyle champion knows what he wants from boats. In 2003, with savings from writing books and selling instructional videos, Jackson started Jackson Kayak, a custom manufacturer with 14 employees in Rock Island, Tenn.
